Our Family Macaroni Salad
There are tons of pasta salad recipes available everywhere; cook books, paper, magazines and the Internet. But for as long as I can remember, my Mom made this Macaroni Salad and it is
a family favorite. It is always a hit if I take it to a potluck or family dinner. It took me years to learn how to make it like Mom does though. I thought you might enjoy the recipe.
Cook salted Macaroni in the amount your family will eat. I don't add near as much water as the instructions say to do as we like to cook it almost dry to keep in the starches. Drain until all liquid is gone and put in a bowl for mixing. At this time I add some Miracle Whip to it so the macaroni absorbs it.
Cut up a large juicy tomato, (I skin it by dipping it in boiling water) into bite size pieces. Chop up a green pepper and cucumber after removing the seeds from both. Add lots more Miracle Whip. This is the one time I don't use Mayonnaise, because the sweet taste of Miracle Whip makes this dish much more tasty. Then add lots of ground pepper, the more the better. Of course this depends on your families taste too. Pour into a pretty bowl and enjoy. Let me know if you try it and how you like it.
