HONEY ORANGE CHICKEN AND ROASTED POTATOES




We purchased a veggie basket for our new grill.
Tonight I chopped up some Yukon Gold Potatoes,
added some Olive Oil, fresh rosemary, salt, pepper
and a sprinkle of Mrs. Dash seasonings. I put the
potatoes in the basket (watch out for flames) and grilled
them. They were so yummy and easy. You could add
any kind of seasonings or veggies your family enjoys.

The Honey Orange Chicken is the best recipe I have
ever fixed. This is what I do:

Cover 4 large chicken breast with wax paper and pound until each are the same thickness. Put in plastic bag, cover with buttermilk and marinate over night. (this makes them very moist.) In the morning, remove from bag, rinse well and pat dry. Put in a new plastic bag and marinate for at least 6 hours.


Honey Orange Chicken Marinade

1/2 cup vegetable oil

4 tablespoons honey

4 tablespoons finely chopped fresh parsley

3 tablespoons very finely chopped fresh rosemary

1 teaspoon dried basil

1/2 teaspoon grated orange zest

1/2 teaspoon salt

1/4 teaspoon pepper

1/2 cup orange juice

I cook about 6-10 minutes or until juices run clear, turning at least 2 times.

Ohhh, I am trying this for Sunday supper...I am trying to start a new tradition as our girls have just recently moved out...supper at Mom and Dad's (thats us) every Sunday night at 6pm! I think they are gonna love this! Thanks so much for sharing.
