Many years ago (I was a kid), my Mother was reading a Good Housekeeping Magazine and found this Corn Relish Recipe. She has made it each year since then until I took over most of the canning. She usually helps me, but this year she wasn't able, so I was on my own. (that's a scary thought)
I had planned to make cards and work in my shop yesterday. Well, how quickly that plan changed. I ended of freezing 8 -1 1/2 pints of peaches and I canned 20 1/2 pints of Corn Relish.
It didn't sound like a big project in the morning, but by the time I clean the corn, green peppers and onions, chop everything and cooked it stirring constantly for 40 minutes it was 5 PM when I
finished. So, there goes another day and I was very tired.
Jon won't eat the relish (he's a picky eater), but Mom and I love it especially with soup beans and fried potatoes. If anyone wants the recipe, just let me know. I am happy to share it.
I hope you all have a great Holiday weekend. I plan to "play". No canning this weekend. We have a huge Blueberry Festival in Plymouth that we go to every year on Friday night. Over 100,000 attend so we like to go early and stay clear of the
town the rest of the weekend.
