CORN RELISH RECIPE

I have had several requests for the Corn Relish recipe and some didn't give me their e-mail address. So, I decided to post it here and everyone that wants it can copy and paste it.

12 EARS OF CORN CUT OFF RAW and scrape the cob (approximately 10 cups)
3 C SUGAR (if your corn is not real sweet you might want to add 1 more cup so it isn't too sour. I usually do even though are corn is extra sweet.

COOK 20 MINUTES STIRRING CONSTANTLY

ADD:

6 GREEN PEPPERS CHOPPED
6 RED PEPPERS CHOPPED (approximately 14 cups for both red and green, if you do not have red available just add all green to make the 14 cups.
10 CHOPPED ONIONS (approximately 14 cups)
1 C MUSTARD (1/2 PINT)
1/4 C PICKLING SALT
3 C VINEGAR

MIX PEPPER MIXTURE WITH CORN AND SUGAR AND COOK ANOTHER 20 MINUTES (I don’t start timing until it is almost boiling)

Put in jars add lids and rings

do a water bath IN boiling water for about 15 minutes

One struggle we have ALWAYS had is the very top turns dark after a few months. It doesn’t seem to hurt the relish ,but doesn’t look the best. If you figure out a way to stop that let me know. We have tried with not much success. We didn’t used to do a water bath but we tried it last year and it did seem to help.

The Corn Relish looks and sounds yummy!!! I must start thinking of doing applesauce and salsa -- that's about all I do!!!
